STUDIOARCHITECTURE and Prairie Thunder Baking Company About the Dessert: The dome for the State Capital building was designed using the state wildflower Gaillardia Puichella, the Indian Blanket, as inspiration. Our dessert strives to represent both the dome of the capital and the flower that was its muse. At the very center of the dessert is a vanilla bean cream puff filled with a diplomat cream. The shape of the cream puff represents both the form of the dome and the bulbous center of the flower. Surrounding the cream puff are a vanilla bean crème anglaise and a cherry-blueberry reduction. The vanilla bean crème anglaise and the cherry-blueberry reduction are swirled together to represent the coffers in the dome as well as the petals on the flower. The color of the cherry-blueberry reduction showcases the rich color at the very center of the flower which was then carried into the coloring along the inside of the dome. The vanilla bean cream puff is topped with spun sugar creating an abstract representation of the ribs of the dome and the texture of the center of the flower. Located in the Plaza Court Building in the heart of Oklahoma City’s Midtown District, Prairie Thunder Baking Company is an artisan bakery. The mission of Prairie Thunder is to bake the best quality breads and pastries available to the Oklahoma City area, always fresh and always from scratch. Breads are made fresh every morning with 100% natural ingredients and no preservatives. The breads are the pride and joy of the company, but many stay for the delicious pastries. All breads, pastries, muffins, cakes and pies are made on-site with the freshest and highest quality ingredients available.
